Every step of our process, from the traditional floor malting through the double distillation in small direct-fired copper pot stills to the gentle ageing in carefully selected casks, is carried out with meticulous attention to detail. Floor malting is a rare traditional method of malting grains in small batches that allows for greater control of the grain, delivering authentic character and depth of flavour, and transferring the elegance and beauty of the Danish West Coast to the whisky. This is lost practice in most places and very few distilleries floor malt 100% of their grains.
The direct fire contact helps produce more Maillard reaction – the process which turns sugars and proteins into countless complex flavours. This means we have fresh bright rich fruity and floral new make spirit. When matured in a selection of fresh oak casks our whisky delivers depth of character and elegance.
Stauning was founded in 2005 by a collective of nine friends setting out to make a difference and bring whisky distilling back to Denmark. They focused on traditional production methods, such as floor-malting of the local rye and barley grains and using direct fire to heat the small stills, to create whisky reflecting the Danish ethos. What they created was a purpose-built distillery that embodies modern Danish design and a thoughtfully designed production process.
